Peanut Butter Cup Surprise Monster Cookies

Cookies are kind of my thing.  If I think about it cookies are my daughter's thing too.  But not the packaged cookies at the store.  Fresh baked cookies.  Not that there is anything wrong with packaged cookies.  Oreos rock.  But there is nothing like a fresh baked cookie. 


I brought these peanut butter cup surprise cookies to a new years eve party and they were a hit. 




This cookie is full of yummy goodness.  If you like peanut butter cups this is the cookies for you.  Not only is there is peanut butter cup inside but the cookie itself is a peanut butter oatmeal cookie. 


Peanut Butter Cup Surprise Monster Cookies


Ingredients:
  • 3/4 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1 egg, large
  • 1/2 cup creamy peanut butter
  • 2 teaspoon vanilla extract
  • 2 cups quick oats
  • 1 and 1/4 cup mini M&Ms
  • Reese's miniature peanut butter cups
Directions:
  1. Preheat oven to 350F.  Line baking sheets with parchment paper or silicone baking mats.  Set aside
  2. Mix flour, salt and baking soda together in large bowl.  Set aside.
  3. In a medium bowl, whisk the melted butter and brown sugar together until no brown sugar lumps remain.  Whisk in the egg, peanut butter, vanilla extract until combined. 
  4. Pour the wet ingredients into the dry ingredients and mix together with a rubber spatula.  The dough will be very soft.  Fold in the oats and the M&Ms.  Allow the cookie dough to sit for 15 minutes. 
  5. Separate the cookie dough into 1.5 tablespoon balls.  Place a peanut butter cup between 2 cookie dough balls.  Cover the peanut butter cup with the cookie dough.  Repeat with the rest of the dough and peanut butter cups.
  6. Bake the cookies for 12-13 minutes.  Allow to cool on the cookie sheet for 10 minutes before transferring to a wire rack to cool completely. 
These cookies are a must make.  They are very rich.  Basically in my house this cookie is best as a dessert after dinner.

Chocolate Peanut Butter Cup Cookies

This Mother's Day my family decided to do a late lunch.  My awesome godfather cooked, my mom and grandparents prepared fruit, and I made some sweets.  My family is easy.  We love food.  The only requirement is that it is good.

So since I was already bringing some muffins and bread from brunch to share (more on that later) El Hubby convinced me to make cookies.  He really had to twist my arm on this one.  With it being so hot lately it was hard to want to start up the oven.


But then I remembered that I had bags of Reese's mini peanut butter cups from the after Easter sale at Target.  Oh you know I hit up the candy aisle after the holiday.


Chocolate Peanut Butter Cup Cookies
Adapted from Mrs. Regueiro's Plate

Ingredients:
16 tablespoons unsalted butter, room temperature (2 sticks)
3/4 cup packed brown sugar
1/4 cup white sugar
1/4 teaspoon salt
1 (3.5) package instant chocolate pudding mix
2 eggs
1 teaspoon vanilla extract
1/2 cup all purpose flour
1 3/4 cup wheat flour
1 teaspoon baking soda
2 bags Reese mini peanut butter cups unwrapped

Directions:
1.  Preheat oven to 375 degrees.  Line baking sheets with parchment paper
2.  Cream butter and sugars until light and fluffy.
3.  Add pudding mix, eggs, and vanilla extract.
4.  Whisk together the flours, baking soda, and salt.
5.  Slowly add the dry ingredients with the wet ingredients until just incorporated.  DO NOT OVER MIX!
6.  Fold in the mini peanut butter cups
7.  Using a cookies scooper, scoop 2 tablespoons cookie dough on prepared baking sheet.
8.  Bake for about 10 minutes or until lightly brown.  Remove and place on cooling rack.

These cookies were amazing.  Just the right about of chocoate-EE-ness and oh the pieces of peanut butter cut is so yummy.  I will for sure be making these again.  These would be good sandwiching some ice cream.  Oh the possibilities ca be endless.  


The fur baby gave me lots of kisses for Mother's Day and that is all a fur mama could ask for.  That and maybe some snuggle time which I got a lot of too.


The pup spent the morning hanging out with my in laws for Mother's Day brunch and then off we went to have a late lunch with my extended family.  Khloe the pup had a very full day.  By the end of the night she was ready for bed.

Oatmeal Peanut Butter Cup Cookies


I don't know what made me want to bake cookies with no AC but I did it.  Who knows what my problems is but I am sure my husband and my pup think I am insane.  It's been over 2 weeks and I still do not have a working AC.  It's suppose to be fixed this week.  I have been living in a house that runs anywhere between 90-93 degrees inside.  Pretty insane.  Oh and after the AC is all fixed I will be broke.  Ah it's Murphy's Law.  Just when I think I can start saving some money for a project something breaks and needs fixing.  Sad.  At least these oatmeal cookies were served at a cool place.  

Oatmeal Peanut Butter Cup Cookies
Adapted from Tracey's Culinary Adventures

Ingredients:
1 cup all purpose flour
1/2 cup wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
2 cups oats
2 1/2 cups peanut butter cups, coarsely chopped

Directions:
1.  Preheat oven to 350 F.  Line baking sheets with parchment paper.
2.  Whisk flours, baking soda and salt together. 
3.  Cream the butter and sugars on medium speed until light and fluffy (about 3 minutes)
4.  Add eggs, one at a time, then the vanilla and beat until smooth. 
5.  With the mixer on low, add the dry mixture and beat just until incorporated.  Do not over mix!
6.  Mix in oats. 
7.  Mix in peanut butter cups into batter.
8.  Use a small cookie scoop to drop balls of dough onto the prepared baking sheets, leaving about 2 inches between them. 
9.  Bake for 9 minutes.  
10. Let the cookies cool on the baking sheets for 5-10 minutes, then transfer to wire racks to cool completely. 

The husband has been secretly eating my peanut butter cups and replacing them waiting for me to use them in a cookie.  However, I never knew old people would like this cookie this much.  My grandparents seemed to really like these cookies and sweets are not even their thing.  Must be the oats.  My godmother loves sweets so of course she approved.  Hopefully the next time I use this recipe it will be a better temperature in my kitchen.  I think it effected how my cookies looked.

PB Cup Cozies

My husband loved these cookies so much that he called them husband cookies. I made these for him to bring to a bachelor poker party. The recipe is pretty big so there were some that I kept to eat myself. Any body that likes peanut butter cups must try these. I prefer to call them PB Cup Cozies.


Ingredients:
Reese's peanut butter cups miniatures
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt

Directions:

1. Heat oven to 375F. Remove wrappers from PB cups. Spray mini muffin cups with cooking spray.

2. Beat butter, brown sugar, granulated sugar, peanut butter, egg, and vanilla until light and fluffy in a large bowl. In a separate bowl stir together flour, baking soda, and salt. Add dry ingredients to wet ingredients until well blended. Shape dough into 1 inch balls and place one in each prepared muffin cup. Do not flatten.

3. Bake 10 to 12 minutes until puffed and lightly browned. Remove from oven. Immediately press peanut butter cup into each cookie. Let cool in muffin pan for about 5 minutes. Then carefully remove from pan and cool completely on wire racks.

Makes about 40 cookies.

You will be tempted to eat the cookies warm. DO NOT DO IT! They are so much better when cooled completely. Totally worth the wait. This is a recipe worth saving.
