Pork Chop

It's been a while since my family had pork chops.  I think I forgot how good this is.  Need to make sure pork chops are added to the meal rotation.

Pork Chop

Ingredients:

  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 5 cloves minced garlic
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon white pepper
Directions:
  1. Marinade for 4 to 24 hours.
  2. Fry pork chops or grill.
  3. Serve with rice. Enjoy!
These were grilled and oh so good.  Thin boneless pork chops were used.  So yummy!  Make this!

Carnitas

I started using a Instant Pot during the Fall and I really like it.  I am still getting use to it but there are a handful of recipes that my family loves and it's super easy with the Instant Pot.

My family loves Mexican food.  I am sure this is not super authentic BUT we like it and it's super easy with the Instant Pot.

Carnitas

Ingredients:

  • 1 tablespoon vegetable oil
  • 3lbs boneless pork shoulder, cut into chunks
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon ground pepper
  • 12 oz chicken broth
  • 6 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 teaspoons dried oregano
  • 1 1/2 teaspoons ground cumin
Directions:
  1. Set a 6-qt Instant Pot to the high saute setting,
  2. Heat vegetable oil; season pork with salt and pepper.  Working in batches, brown pork.
  3. Stir in chicken broth (or beer), garlic, chili powder, oregano and cumin.  Select manual setting; adjust pressure to high, and set for 40 minutes.  When finished cooking, quick release pressure according to manufacturer's directions.
  4. Remove pork from the Instant Pot and shred meat using two forks.  Season with salt and pepper, if needed.
This is great for tacos, burritos, nachos, pizzas or just by itself.  We have even tried our own version of a torta with it.  If you don't already have a Instant Pot I highly recommend it.

Instant Pot BBQ Ribs

Finally jumping onto the Instant Pot craze.  I have always been horrible with the crock pot.  So I have been a little hesitant with the Instant Pot.  But so far all the recipes that I have tried have come out well.

I think one of the best parts of the Instant Pot is that it does not get the house super hot.

I have never cooked ribs before.  So this is a major first.

These ribs came out super yummy and kid approved.  They were super tender and fall off the bone.

Instant Pot BBQ Ribs

Ingredients:

  • 1 tablespoon brown sugar
  • 2 teaspoon salt
  • 2 teaspoon onion powder
  • 2 teaspoon chili powder
  • 2 teaspoon ground mustard
  • 1 1/2 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 2 lbs baby back pork ribs, trimmed of excess fat, pat dry
  • 2 cups chicken stock
  • 1/2 cup apple cider vinegar
  • 2 cups BBQ sauce
Directions:
  1. In a small bowl, combine brown sugar, salt, onion powder, chili powder, mustard, paprika, thyme, oregano, garlic powder, black pepper, cumin and cayenne pepper.
  2. Remove the membrane from the underside of the ribs.  Try to pull it down the entire length.  Season ribs with brown sugar mixture, rubbing it thoroughly on both sides.
  3. Please metal trivet into the instant pot.  Add chicken stock and apple cider vinegar to a 6 quart Instant Pot.  Please ribs upright on top of the trivet, wrapping in a circle.
  4. Select manual setting, pressure to high, and set time for 25 minutes.  When finished cooking, quick release pressure according to manufacturer's directions.
  5. Preheat oven to broil.  Line a baking sheet with foil.
  6. Please ribs in a single layer onto the prepared baking sheet.  Brush generous with your favorite BBQ sauce.
  7. Place into oven and broil until BBQ sauce is caramelized and browned, about 4-6 minutes.
  8. Serve with extra BBQ sauce.
I am totally making this recipe again.  I am really loving my Instant Pot.

Mama's Pork Chop Marinade

My mom makes the best fried pork chop hands down.  She went through this phase where she was a vegetarian for like 5 years or so.  Thank goodness she still made her friend pork chop.

I was able to get her pork chop marinade recipe.  It's super easy and makes the yummiest pork chops.  I have El Husbee grill pork chops ... cause ... you know ... I am lazy.

Ingredients:

  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons brown sugar
  • 5 cloves minced garlic
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon white pepper
Directions:
  1. Marinade for 4 to 24 hours.
  2. Fry pork chops or grill.
  3. Serve with rice. Enjoy!
Make this recipe friends.  It is yummy.  Your whole house will smell yummy when you make it too.

Grilled Pork Chops

We are now full blown into summer.  With the super hot weather what better way than to grill to keep the house cool.  Grilling also means less pots and pans to wash which is fine by me.

A simple dinner of rice, veggies, and meat.  I like to mix brown and white rice and cook it with a little olive oil.  the rice comes out amazing.  Uh if I am too lazy to cook inside of course I would use frozen veggies.

Grilled Pork Chops

Ingredient:
4-5 slice of pork
Italian dressing

Directions:
  1. Marinade pork in Italian dressing (best if over night)
  2.  Pass meat to El Hubby to grill
Muahahaha.  What a awesome dinner.  Okay okay I am guessing you grill the pork for about 7-10 minutes each side at around 375 degree F.  But don't quote me on that.  I solely rely on El Hubby for all my grilling needs.  Who do I look like?  Girl meets girl?  No.

Korean Pork Ribs

Easy recipes are my favorite.  Oh this recipe is easy.  It requires a little prep work but the end result is much worth it.  I bought ribs and instantly marinaded them when I got home from the store.   You see, this recipe requires 8-24 hours of marinating.  Hence the yummy end flavor.

When it comes to dinner and never know what to make.  My worst nightmare is when the husband texts "what's for dinner?"  Bah!  I am also indecisive.  So if I don't marinate meat or set a meal plan for the week I have known to let meat go bad in my refrigerator.  I know I know.  Bad!  I must work on this.

Korean Pork Ribs
Adapted from Runs with Spatulas

Ingredients:
1/3 cup soy sauce
2 tablespoons sugar
1 teaspoon ground ginger
3 tablespoons rice vinegar
1 tablespoon sesame oil
1/4 teaspoon crushed red pepper
4 garlic cloves, minced
2 tablespoons garlic hot sauce
1 pound pork ribs

Directions:
1.  In a large ziploc bag, combine all ingredients including pork.  Marinate in refrigerator for 8 hours or overnight.
2.  Preheat oven to 350 F.  Line a baking pan with foil for easy cleaning.
3.  Bake for about 40 minutes.
4.  Ribs should fall off the bone.

These ribs made a amazing dinner.  The meat fell off the bone and was super tender.  The husband really enjoyed this dinner.

Enjoy!
