Fruit Popsicles


I really want Baby Girl to have a good relationship with food.  Not only trying and enjoying all kinds of food but also eating good food. 



Making my own fruit popsicles was super easy.  I just cut up fresh fruit into tiny pieces and then poured coconut water as my liquid. 

Baby Girl really liked these popsicles and I don't feel bad about giving her something unhealthy.  I think next time I will try and add some pureed fruit too.

Pineapple Upside Down Cake

I love pineapple.  Especially in the summer time.  It's such a great refreshing fruit.  It's great in drinks, food, grilled, and in dessert. 







I have been wanting to make a pineapple upside down cake for a long time.  Why?  Because I LOVE PINEAPPLE!


Ingredients:
TOPPING
  • 1/4 cup unsalted butter, melted
  • 1/2 cup packed brown sugar
  • sliced can pineapple
  • maraschino cherries
CAKE
  • 1 2/3 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3/4 brown sugar, packed
  • 1/4 cup sugar, granulated
  • 1 egg, large room temperature
  • 1/4 cup yogurt
  • 1/2 cup whole milk
  • 1/4 cup pineapple juice (reserved from the canned pineapple)
  • 1 tablespoon vanilla extract
Directions:
  1. Preheat oven to 350F
  2. Please 1/4 cup of melted butter into a 9 inch pie dish.  Make sure the pie dish is at least 2 inches deep.  Sprinkle with 1/2 cup of brown sugar.  Top with pineapple slices and arrange cherries between the pineapple slices.  Set aside.
  3. In a medium bowl, mix together flour, baking powder, baking soda, and salt.  Set aside. 
  4. In a large bowl, whisk the melted butter and sugars.  Whisk in egg, yogurt, milk, pineapple juice, and vanilla extract until combined. 
  5. Slowly mix in dry in dry ingredients.  Do no over mix.  Batter will be thick.
  6. Pour or spoon batter into prepared pan.  Make sure batter is not overflowing.  Bake for 40-48 minutes.  Cover with aluminum foil at the 20 minute nark to avoid browning.  Allow to cool for about 10 minutes. 
  7. Invert cake on top of a cake stand or a large serving plate. 
El Husbee and I ate this cake served over vanilla ice cream.  This cake is good served warm, room temperature or out of the refrigerator.


I did end up with some extra batter so I made cupcakes with them for Baby Girl.

Pineapple Angel Food Cake

Is anyone on Pinterest?  Pinterest has everything.  EVERYTHING!  My favorite catergory on Pinterest is the Food and Drink.  There are so many recipes on Pinterest that I want to try.

I decided to try making a pineapple and angel food cake recipe that I saw on Pinterest.  The cake only requires a box of angel food cake mix and a can of crushed pineapple.

Pineapple Angel Food Cake

Ingredients:
1 box of Angel Food Cake mix
1 can crushed pineapple 20oz

Directions:
1.  Preheat oven to 350 degrees
2.  Mix angel food cake mix and 1 can of crushed pineapple
3.  Pour mixture into a 9x13 pan and bake for about 30 minutes
4.  Cool before eating

This cake smells so good baking and your house afterwards will smell amazing.  This cake is so easy to make and taste amazing.  So much flavor and so fluffy.  But please be careful when baking.  I seemed to burned mine a little so I will make sure to watch more carefully the next time I make it.  A great way to eat this cake is with some vanilla bean ice cream.  Amaze-A-BALLS!  According to Pinterest you can also make this with fruit pie filling such as blueberry, lemon, and apple.  Considering trying this next time.

Pinkberry

So El Hubby and I are major dessert people.  Hence my baking obsession. 

One of our favorite sweets is froyo.  A few weeks ago I got to try Pinkberry for the very first time while in San Diego. 


Oh my gawd!  Pinkberry is awesome.  I got the peach yogurt with pineapple and strawberry as my toppings.  I was a little scared at first on how the peach yogurt would taste.  But it was amazing.  By my choice of yogurt and topping you can clearly tell I am a fruity kinda gal. 

I can't believe that I have been missing out for so long.  However, it does make me sad because there is no Pinkberry near my hometown.  But I did go to their website (because it's 2012 and everyone has a website) and found out that Pinkberry is a franchise.

Mental note:  start considering quitting day job and opening a Pinkberry. 

The Pinkberry I visited in San Diego was a cute kiosk looking place.  The line was long and slow but it was worth the wait in the end.  The store was nice and clean.  The employees were nice and happy.  But then who wouldn't be working in a yogurt place.  I am for sure stopping the next time I see a Pinkberry.

Khloe this pup is always a happy dog.  There is really not much that gets this doggie down.  She even loves the vet.  It always makes me laugh when the vet is trying to feel her looking for anything abnormal and Khloe gives her kisses.  El Hubby and I are very luck. 

Life is short.  Eat dessert first!
