PB Cup Cozies

My husband loved these cookies so much that he called them husband cookies. I made these for him to bring to a bachelor poker party. The recipe is pretty big so there were some that I kept to eat myself. Any body that likes peanut butter cups must try these. I prefer to call them PB Cup Cozies.


Ingredients:
Reese's peanut butter cups miniatures
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt

Directions:

1. Heat oven to 375F. Remove wrappers from PB cups. Spray mini muffin cups with cooking spray.

2. Beat butter, brown sugar, granulated sugar, peanut butter, egg, and vanilla until light and fluffy in a large bowl. In a separate bowl stir together flour, baking soda, and salt. Add dry ingredients to wet ingredients until well blended. Shape dough into 1 inch balls and place one in each prepared muffin cup. Do not flatten.

3. Bake 10 to 12 minutes until puffed and lightly browned. Remove from oven. Immediately press peanut butter cup into each cookie. Let cool in muffin pan for about 5 minutes. Then carefully remove from pan and cool completely on wire racks.

Makes about 40 cookies.

You will be tempted to eat the cookies warm. DO NOT DO IT! They are so much better when cooled completely. Totally worth the wait. This is a recipe worth saving.
